Chocolate Mousse For Vegetarian...Smack!

Dear Friends....
The recipe I am going to share today is a fairly simple yet utterly scrumptious one...Eggless vegetarian Chocolate Mousse...It is a quick-fix recipe taught to me by my dear friend Reema, a dentist by profession but a cuisinier at heart...Thanks dear for showing me the passage to  Bliss!!

There are times when we are so busy putting up the Nick-knacks for a perfect dinner that by the time we realise it, there's no time left for preparing the dessert, which by the way is supposed to be the most time-consuming and elaborate of all the courses...

This Chocolate Mousse is my favourite as it looks exotic and tastes just like heaven!!Check it out...

Ingredients:
  • chocolate sponge cake (sliced into two horizontal halves or just cut into thin pieces.)
  • 1/2 cup water
  • 2 tbsps sugar
  • 2 tbsps Rum
  • 1/2 lt. Cream
  • Powdered sugar to taste
  • 1 tsp vanilla essence
  • 250 gms dark cooking chocolate
  • 1 cup chopped walnuts
  • 1 cup chopped milk chocolate
  • confetti for decoration
Method:
  • Layer a serving dish with pieces of chocolate sponge.

  • Make a syrup of water, granulated sugar and Rum....you may add a dash more if its a weekend!! Now soak the layered sponge with this syrup so that it becomes moist. Keep aside.

  • Take chilled cream in a bowl and beat until it is fluffy and begins to rise.

  • Add powdered sugar (1/2 cup or according to taste) and vanilla essence.

  • Beat till the cream becomes stiff. (Not a pouring consistency). Keep in the refrigerator for some time.

  • In a bowl, break the dark cooking chocolate melt it in a double boiler as shown in the picture till it melts into a smooth paste.(Make sure not to over-heat the chocolate, as it will become dry and powdery.)

  • Cool it a little (for a minute or two - it shouldn't set) and then pour it onto the beaten cream.

  • Mix this till both are well incorporated.

  • This mixture will start thickening as you mix in the chocolate sauce...perfect texture for mousse.

  • Now Mix in the milk chocolate bits.

  • And the walnut chunks. Mix everything properly.

  • Spread this mixture on top of the soaked layer of sponge cake.

  • Decorate with confetti and chill it till serving time.

  • Veg Chocolate Mousse is ready for you to devour...

  • If need be, one can set it separately in martini goblets to make it look ritzy and posh....This, though, can be done if the gathering is small.

  • You have to try it and feel it melt in your mouth like Candy Floss...Bon appetit!!
