Banana Muffins...Short Break Treat!

Good Morning Dear Friends,
My kids love bananas, but the moment they turn a little mushy...they go inside the garbage can, which I feel is  a pathetic waste! So here's a healthy muffin recipe where we can use those poor fruits! And our brats will enjoy them too... This recipe has whole wheat flour in it which makes us a little less guilty of feeding our kids junk stuff. The muffins come out good, a little sticky on the top though, due to the wheat flour in them, but they taste good... My kids finished off 18 of them in a day!!
So, here it is!

Ingredients:

1 cup wheat flour (Atta). 
1 cup refined flour (Maida)
1 cup curd
1 and 1/3 cup sugar (I don't grind it...lazy!)
1/2 cup oil
2 bananas mashed
2 eggs
1 tsp Vanilla extract
1 tsp Baking powder
1/2 tsp Baking soda
1/2 a bowl of chopped walnuts or candied peels





Method:

Sieve together Atta, Maida, baking powder and baking soda and keep aside.


Line a muffin tray with cup cake casings and pre-heat the oven/microwave in convection mode.


In a bowl, beat the sugar with the oil till they blend well...In my case the sugar granules could blend with the oil that well. If you are using powdered sugar, make it 1 and 3/4th cup of sugar.


Whisk in the eggs.


Blend them well till the mixture becomes smooth and fluffy.


Add curd and blend.


Add mashed bananas and blend.


Add vanilla essence and mix.


Now, add the flour-mix 2 spoons at a time and slowly fold it into the egg mixture. Remember the cut and fold method??


Add chopped walnuts to the muffin mix.


Fill the mixture in the muffin casings till 3/4th.


Bake in the oven at 180 degree for 23 to 25 minutes till a toothpick comes out clean..


Serve with whipped cream. No harm in keeping the leftover batter aside till the first lot of muffins is done. Its OK to bake in batches. The muffins come out as well.


So let your kids gorge on these healthy and delicious muffins. They will love you for being so thoughtful and thrifty!!
