Capsicum Stuffed with Corn & Paneer

Good Day All...
Today, I read about this wonder vegetable Capsicum and was surprised to find out that this super veggie has been in existence (according to historians) for at least 9000 years! Ancient!!
 Not only does this amazing veggie improve our immune system but it also has preventive and healing properties and can help in prevention and treatment of heart disease, osteoarthritis, bronchitis, cataract... and the list goes on! What more...listen to this... it helps in burning calories as it improves the body metabolism. What else do we need?
So...why ignore this green gold? Let us stop treating it as an accessory for noodles and mix veg and graduate to making a better dish out of it! So an interesting twist to our favourite stuffed capsicum is coming up for you. Hope you like it!

Ingredients:
3 Capsicums (cut into halves & seeds removed)
250 gms Paneer (cottage cheese)
1/2 cup grated processed cheese
1 cup corn kernels
1 tsp finely chopped green chillies
1/2 inch ginger grated
1 tsp garam masala
1 tsp chilli powder
Salt to taste
2 tbsps oil for frying

Method:
Grate the cottage cheese (paneer) and mix with grated processed cheese. Keep some processed cheese aside.

Steam the corn kernels and add them to the cheese mix.

Add the green chillies and grated ginger.

Tip in the garam masala and chilli powder.

Now add salt to taste.

Mix all the things together and keep aside. now cut the capsicums into half and de-seed them. They will form cute green bowls. Fill these Capsicum bowls with the cheese corn stuffings. Sprinkle the processed cheese that has been kept aside on top of each bowl.

In a pan, heat oil.

When the oil is hot enough, place the capsicums in the pan the way they are shown in the picture.

Cover the pan with a lid and let it cook on slow flame for 20 minutes or till the capsicums are tender. 

Now remove the lid and fry on high flame till the capsicums are slightly roasted from outside.

Paneer stuffed capsicums are ready. They are a wonderful side dish for both Indian and continental platter. For continental ,we can just do simple variations by switching from garam masala to any fresh or dry herbs like oregano or thyme. Fresh and easy Corn & Paneer Capsicums!
