Navratri Special-Sago Vadas
Hello All and a very happy Navratri to all of you.
Indians are foodies! Why I have concluded this is because I see that we keep looking for occasions to experiment with good food. One can well understand that Navratri is a Fasting Fest but we have a different set of eats lined up for it! Come on! you are supposed to be fasting!! At the end of the nine-days long fast, I find friends cribbing.." I was supposed to loose weight but I have gained!!"...My dear you were supposed to fast but you ended up eating more than your usual intake! But that's all in good humour...It is fun to celebrate and eat with family!
Fasting can be arduous and tiring. But, the 9 days Navratra fasts are more fun than grueling. Lot of things are there on the "can be consumed list" so no fret at all. Today I am making my favourite Sago Vadas or Sabudana Vadas. Here's how I make these mouth-watering snacks.
Ingredients:
200 gms Sago/sabudana
1/2 kg Potatoes boiled and peeled
150 gms peanuts
2 tsps chopped coriander leaves
1 tsp finely chopped green chillies
2 tsps grated ginger
1 tsp chat masala
Salt/rock salt to taste
Method:
Soak the sago in water for 2 to 3 hours. Make sure that the level of water in the bowl is enough to immerse the sago.You will see that the sago is soft and fluffy after 2 hours and there is no sign of water.
Dry roast the peanuts in a pan till the skin starts coming off. Cool them and remove skin.Coarsely crush them in a grinder. Don't make them too powdery.
Mash the boiled potatoes thoroughly and add them to the soaked Sago. Tip in ginger, coriander and green chillies.
For the Chutney:
In a grinder, grind coriander leaves(1 bowl),green chillies( 2 nos.), ginger (1 inch), mint leaves( 2 sprigs), salt and dry mango powder( 1 tbsp) into a fine paste. you can add a few spoonfuls of water if necessary. The chutney is ready.

Make flat round balls or tikkis from the mix and deep fry in hot oil till golden brown and crispy.
