Sun Kissed Party Rolls
Good Day dear friends...
Continental cuisine is incomplete without Dinner Rolls just like our Indian cuisine, which cannot be served without Chapaties or Rice. I am generally used to ordering dinner rolls from our nearby bakery as baking gives me the jitters; but then there have been times when I have forgotten to place an order and, sadly, have had to compromise with a loaf of bread instead! Remember Kalimpong has it's short comings. We just can't go and pick up dinner rolls from any posh departmental store.
So...for those of you who are sailing on the same boat...here's the recipe for perfect Party Rolls.
Ingredients:
4 cups plain flour (refined)
1 tsp salt
1/4 cup oil
pinch of pepper
Pinch of nutmeg
1 cup milk
1 tbsp dry (powdered) yeast
1/2 tsp sugar
1 egg
For Decoration:
1 egg yolk
2 tbsps milk for brushing
Coarse salt, caraway seeds or sesame seeds
Method:
Use 2 baking trays. Line them with butter paper (I slightly greased the trays...works well). Place flour, salt, oil, pepper and nutmeg in a bowl.
Heat milk until lukewarm, beat in yeast (let it dissolve), sugar and egg and pour onto flour mixture.
Knead the mixture to a sticky dough. Cover, leave to rise in a warm place for 30 minutes.
Turn the dough onto a lightly floured work surface ( a clean kitchen slab will do); Knead and punch it down for 10 minutes.
Shape dough into a cylinder and cut into 20 equal pieces. Give them whatever shape you want to...round rolls, pretzels, rings...and place on the baking trays.
Whisk egg yolk with milk and brush over the dough.
Sprinkle salt, caraway seeds/sesame seeds on top of the rolls. Cover the rolls and leave to rise in a warm place again for 20 minutes.
Pre-heat oven to 200 degree C/400 degree F. Bake rolls one baking tray at a time, for 15 to 18 minutes. Cool briefly on a wire rack.
Serve these babies warm with the accompaniment of your choice.
